Banana Oatmeal Pancakes

I’ve posted this recipe a number of times, and I’m posting it again here as I have to make sure it makes it onto my website of course;)

This is a recipe that I make on a regular basis for the fam - my eldest loves them and we like to play around with adding new and delicious ingredients, such as chocolate chips (it’s not hard to guess what she wants to add each morning lol).

You can double up the measurements so that you have extra on hand for snacking on later on.

Here you go:

Ingredients

  • 1 large mashed banana

  • Dash of Cinnamon

  • 1.5 generous handful of large flake oats

  • 2 eggs

  • Coconut oil for frying

  • Optional: 2 tablespoons of chia seeds, handful of chocolate chips, pumpkin seeds, dried fruit, etc.

Directions

Step 1. In a large bowl, mash the banana before combining it with the the cinnamon, oats and optional ingredients.

Step 2. Add in the 2 eggs and mix well.

Step 3. Add in optional ingredients, such as the chia seeds, chocolate chips, pumpkin seeds, etc.

Step 4. In a medium or large pan, heat 1 teaspoon of coconut oil on medium heat. When the coconut oil becomes a liquid, spread it out around the pan so that it covers most of it.

Step 5. With a spoon, place the pancake mixture in a circular shape onto the pan. Repeat until you have a fair number of pancakes on your pan, but leave room to flip.

Step 6. Wait until the edges of the pancakes start to bubble before you flip them over - otherwise they will likely break apart.

Step 7. Once bubbling, flip the pancakes over and let them fry until goldenly delicious (I know “goldenly” is not a word:)

Step 8. Place the pancakes on a large plate for them to cool before serving. You can serve with fruit, jam, maple syrup or even nut butter spread on top. Yum yum yum.

Step 9. Eat and enjoy!
