Fruit Crumble

In my house, apples are a girls best friend! My eldest daughter LOVES apples...it goes head to head with chocolate.

So after we went apple picking this Fall, we quickly got into the kitchen and started making our favourite healthy fruit crumble.  This is a variation on many recipes out there, including one of my faves from “Get Naked In the Kitchen”!!

Ingredients 

  • 3 Cups of Oats

  • 1 Cup of Almond Meal/Flour

  • 3/4 Cup of unsweetened Coconut Flakes

  • 1 Tbsp of Cinnamon

  • 2 generous Tbsp of Coconut Oil

  • 3 Cups of peeled and sliced Apples

  • 1 Cup of frozen berries or fruit of choice (Peaches are great)

  • 1 Cup of chopped nuts (Ex. Hazelnuts, Pecans and/or Almonds)

  • 2 Tbsp of Maple Syrup, Honey or Brown Rice Syrup

  • Juice from 1/2 lime

Directions

Step 1. Preheat the oven to 350 degrees F.

Step 2. Peel and slice the apples.  Place them in a large bowl along with the 2 cups of frozen fruit.

Step 3. In a small bowl, mix 1 tbsp of maple syrup and juice from 1/2 a lime.  Once mixed thoroughly, add to the fruit mixture. 

Step 4. Place the fruit mixture into a large baking dish.

Step 5.  In a large pan heat the two generous tbsp of coconut oil.   Once melted add in the 3 cups of oats, 1 cup of almond meal, tbsp of cinnamon, 3/4 cup of unsweetened shredded coconut, and 1 tbsp of maple syrup. Mix well. 

Step 6. Pour the oat mixture over the fruit mixture and mix well.

Step 7.  Place the baking dish in the oven and bakr for 30-35 minutes. 

Step 8. Serve and enjoy!
