Sorry Santa, this is all I had

I used up all my sugar, flour and eggs on the cookies I made for family and friends 🤷🏽‍♀️.  So I’m sorry Santa, while I could have gone back to the grocery store, I chose to make you cookies with whatever I had left in my kitchen;) 

If you’re looking to try something new and different for Christmas (or anything really), try these super healthy and decent cookie recipe lol.  Everyone has different taste, so these may not meet everyone’s “cookie” expectations haha.  The applesauce does give them some sweetness, but the chocolate chips help elevate them to cookie status 😆.

 What you’ll need:

1 Cup of applesauce

1/2 Cup of brown or coconut sugar (add this if you’re picky about cookies being really sweet) 

1/4 Cup of soft butter

2 Tbsp of Chia seeds mixed with water (put enough water to cover the surface by an inch, soak for about 10 min and then you’ve got a mixture to replace eggs)

1.5 tbsp cocoa powder

1 tbsp baking powder

1 tbsp vanilla extract

1 Cups of flour (I did 1 Cup of almond flour, 1/2 cup of coconut flour, and 1/2 cup brown rice flour)

As many chocolate chips as your heart desires:)

 

Directions

Preheat oven to 350 degrees F.

Prepare a baking sheet with parchment paper. 

Combine everything in a blender or food processor until mixed well.

Transfer mixture to a large bowl and then mix in the chocolate chips.

With your hand or a spoon, take enough cookie dough to make a round cookie shape (texture will be soft and a little sticky).

Place the dough onto the baking sheet and bake for 25 minutes. 

Let them cool for 10 minutes and then dive in and gobble them up - but save some for Santa 😉.
